Superfood Kale Recipe

Kale is an awesome superfood with nutrient benefits such as vitamins A, K & C as well as significant amounts of iron and fiber. It may even help lower cholesterol. But, it can be a little difficult to swallow (and chew), especially if you are new to this green. We sometimes chop it up and combine it with thinly sliced Brussel sprouts to make salads, but it is very good cooked as well. Check out this recipe for a tasty kale alternative.

Creamed Kale


  • 4 good sized stalks of kale
  • 1/2 tbsp. butter
  • salt pepper
  • pepper
  • 2 tbsp. sour cream


  1. Trim stems and ribs from kale stalks and chop kale into 1 in. pieces
  2. Melt 1/2 tbsp. butter in a pan over medium heat
  3. Add kale pieces to pan with a splash of water and cook 5-6 min until kale is soft
  4. Season with salt and pepper
  5. Remove from heat and stir in the 2 tbsp. sour cream
  6. Serve immediately
